4 large bell peppers (any color)

1 cup cooked quinoa or rice

1 cup black beans, rinsed and drained

1 cup corn, frozen or canned

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheese (cheddar, mozzarella, or a blend)

1 teaspoon garlic powder

1 teaspoon cumin

½ teaspoon smoked paprika

½ teaspoon onion powder

Salt and pepper to taste

Fresh parsley or cilantro, chopped (for garnish)

Optional: Sliced jalapeños for heat

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes. If needed, slice a thin layer off the bottom of each pepper to help them stand upright.

      Make the Filling: In a large bowl, combine the cooked quinoa or rice, black beans, corn, diced tomatoes, half of the shredded cheese, garlic powder, cumin, smoked paprika, onion powder, salt, and pepper. Mix until all ingredients are well incorporated.

        Stuff the Peppers: Fill each bell pepper generously with the filling mixture, packing it down slightly as you go. Leave a little room at the top for the cheese.

          Top with Cheese: Sprinkle the remaining shredded cheese over the top of each stuffed pepper.

            Bake: Place the stuffed peppers upright in a baking dish. You may add a splash of water to the bottom of the dish to help steam the peppers during cooking. Cover with foil and bake for 25-30 minutes.

              Brown the Cheese: After 30 minutes, remove the foil and bake for an additional 10-15 minutes or until the cheese is melted and bubbly, and the peppers are tender.

                Serve: Remove from the oven and let cool slightly. Garnish with fresh parsley or cilantro and sliced jalapeños if desired.
