1 cup uncooked rice (white or brown)

2 cups vegetable or chicken broth

1 can (14 oz) diced tomatoes, undrained

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 onion, finely chopped

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1/4 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish

Heat the Oil: In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onions and sauté for about 3-4 minutes until they become translucent.

    Add Garlic and Spices: Stir in the minced garlic, dried oregano, dried basil, red pepper flakes (if using), salt, and pepper. Cook for another minute until fragrant.

      Combine Rice and Tomatoes: Add the uncooked rice to the skillet, stirring to coat it with the oil and spices. Pour in the diced tomatoes with their juices and the vegetable or chicken broth. Stir well to combine.

        Simmer the Rice: Increase the heat to bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 18-20 minutes (or according to the brown rice package instructions) until the rice is cooked and has absorbed most of the liquid.
