Cheesy Zucchini Casserole

4 medium zucchinis, sliced into rounds

1 medium onion, diced

2 cups fresh spinach, chopped

3 cups shredded cheddar cheese (divided)

1 cup ricotta cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

1 cup breadcrumbs (optional for topping)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat olive oil over medium heat. Add diced onions and sauté until translucent, about 5 minutes.

      Add sliced zucchinis to the skillet and cook for an additional 5-7 minutes, until they are tender. Stir in the chopped spinach and cook until wilted. Remove from heat and let cool slightly.

        In a large mixing bowl, combine ricotta cheese, 2 cups of shredded cheddar cheese, eggs, garlic powder, onion powder, oregano, salt, and black pepper. Mix until well combined.

          Add the sautéed zucchini and spinach mixture to the cheese mixture, stirring thoroughly to combine all ingredients evenly.

            Transfer the mixture into a greased 9x13 inch baking dish. Spread it out evenly with a spatula.

              If desired, sprinkle breadcrumbs evenly over the top of the casserole for added crunch. Then, sprinkle the remaining 1 cup of shredded cheddar cheese on top.

                Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.

                  Once done, remove from the oven and let it cool for about 5 minutes. Garnish with freshly chopped parsley before serving.
