Ingredients

2 cups plain Greek yogurt

1/4 cup honey or maple syrup (or to taste)

Zest of 1 lime

Juice of 1 lime

1 cup fresh cherries, pitted and halved (or frozen, thawed)

1/4 cup crushed nuts (such as pistachios or almonds) for topping

2 tablespoons unsweetened coconut flakes (optional)

A pinch of salt

Instructions

Prepare the Yogurt Mixture:

    - In a large bowl, combine the Greek yogurt, honey (or maple syrup), lime zest, lime juice, and a pinch of salt. Mix well until smooth.

      Line the Baking Pan:

        - Line a baking sheet (approximately 9x13 inches) with parchment paper, allowing some overhang for easy removal later.

          Spread the Yogurt:

            - Pour the yogurt mixture onto the lined baking sheet, spreading it out evenly to about 1/2 inch thick.

              Add the Cherries:

                - Distribute the halved cherries evenly over the yogurt layer. Gently press them into the yogurt to ensure they stick.

                  Sprinkle Toppings:

                    - Sprinkle crushed nuts and coconut flakes (if using) across the surface of the yogurt and cherries, adding texture and flavor.

                      Freeze:

                        - Place the baking sheet in the freezer and freeze for at least 4-6 hours, or until completely solid.

                          Cut and Serve:

                            - Once frozen, remove the yogurt bark from the pan using the parchment paper overhang. Cut into pieces or break it apart, and serve immediately. Store any leftovers in an airtight container in the freezer.
