Ingredients

1 cup unsalted butter, softened

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

3 cups rolled oats (old-fashioned)

1 cup raisins

1/2 teaspoon ground cinnamon

1/2 cup chopped walnuts or pecans (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan or line it with parchment paper for easy removal.

Make the Dough: In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This typically takes about 3-4 minutes using a hand mixer or stand mixer.

Add Eggs and Vanilla: Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon. Gradually add this dry mixture to the wet ingredients, mixing just until combined.

Fold in Oats and Add-ins: Gently fold in the rolled oats, raisins, and chopped nuts (if using) until evenly distributed throughout the dough.

Spread the Mixture: Pour the cookie batter into the prepared baking pan and spread it out evenly with a spatula.

Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out mostly clean (a few crumbs are fine).

Cool and Cut: Once baked, remove the pan from the oven and allow the cookie squares to cool in the pan for about 10 minutes. Then, carefully lift them out (if using parchment paper) and allow to cool completely on a wire rack. Once cooled, cut into squares.

Serve and Enjoy: Serve your chewy oatmeal raisin cookie squares as a delightful treat with a glass of milk or your favorite beverage. Store any leftovers in an airtight container for up to a week.
