2 cups rotini pasta

1 tablespoon olive oil

1 pound boneless, skinless chicken breasts, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 ½ cups grated Parmesan cheese

1 cup mozzarella cheese, shredded

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of boiling salted water, cook the rotini pasta according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

      Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the diced chicken, seasoning with salt and pepper. Cook for about 5-7 minutes until the chicken is fully cooked and lightly browned. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Make the Alfredo Sauce: Pour in the heavy cream and chicken broth into the skillet, stirring to combine. Bring the mixture to a gentle simmer, then gradually stir in 1 cup of Parmesan cheese until melted and smooth. Sprinkle in the Italian seasoning and adjust the seasoning with salt and pepper as needed.

          Combine Ingredients: Add the cooked rotini pasta to the skillet and gently mix it into the sauce until well-coated.

            Assemble the Bake: In a greased 9x13 inch baking dish, pour half of the pasta mixture. Sprinkle half of the remaining mozzarella cheese and half of the remaining Parmesan cheese over the top. Layer the rest of the pasta and finish with the remaining mozzarella and Parmesan cheese.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is golden and bubbly.

                Garnish and Serve: Once out of the oven, allow the dish to cool slightly. Garnish with fresh parsley before serving.
