1 lb (450g) boneless, skinless chicken breasts, diced

2 tablespoons olive oil

1 medium onion, thinly sliced

1 bell pepper (red, green, or yellow), thinly sliced

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon salt

½ teaspoon black pepper

1 cup mushrooms, sliced (optional)

8 oz (225g) cream cheese, softened

1 cup shredded provolone cheese

1 cup shredded mozzarella cheese

1 cup cooked penne pasta (or any pasta of choice)

½ cup chicken broth

Fresh parsley, chopped (for garnish)

Preheat Oven: Preheat your oven to 350°F (175°C).

    Sauté Chicken: In a large skillet over medium heat, heat the olive oil. Add the diced chicken and cook until browned, about 7-8 minutes. Ensure it is fully cooked; the internal temperature should reach 165°F (75°C). Remove the chicken from the skillet and set aside.

      Cook Vegetables: In the same skillet, add the onion, bell pepper, and mushrooms (if using). Sauté for 5-6 minutes, or until they are tender. Add the minced garlic, Italian seasoning, salt, and pepper, cooking for an additional 1-2 minutes until fragrant.

        Combine Ingredients: In a large mixing bowl, combine the cooked chicken, sautéed vegetables, softened cream cheese, cooked pasta, and chicken broth. Stir until the cream cheese is well incorporated, and everything is evenly mixed.

          Prepare for Baking: Transfer the mixture to a greased 9x13 inch (or similar size) baking dish. Sprinkle the top with shredded provolone and mozzarella cheese.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 25-30 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the casserole is heated through.
