Ingredients

2 cups cooked chicken, shredded

1 cup refried beans

1 cup shredded cheddar cheese

1 cup diced tomatoes (fresh or canned)

1/2 cup minced onion

1/2 cup corn kernels (fresh, frozen, or canned)

1 tablespoon taco seasoning

8 large flour tortillas

2 cups vegetable oil (for frying)

Sour cream, guacamole, and salsa (for serving)

Fresh cilantro (for garnish)

Instructions

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, refried beans, cheddar cheese, diced tomatoes, minced onion, corn, and taco seasoning. Mix well until all ingredients are fully incorporated.

Assemble the Chimichangas: Preheat a deep skillet or frying pan with the vegetable oil over medium heat.

      - Lay one tortilla on a flat surface. Spoon about 1/3 cup of the chicken mixture into the center of the tortilla.

        - Fold in the sides and roll it up tightly from the bottom to the top, ensuring the filling is sealed inside. Repeat with all tortillas and filling.

Fry the Chimichangas: Once the oil is hot (around 350°F or 175°C), carefully place two to three chimichangas seam-side down in the oil. Fry for about 4-5 minutes per side, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Serve: Serve the chimichangas hot, topped with a dollop of sour cream, guacamole, and salsa, and garnish with fresh cilantro.

Enjoy: Dig into the crispy, cheesy goodness of your homemade Chicken Chimichangas and savor every bite!
