2 boneless, skinless chicken breasts, sliced thin

2 packs of instant ramen noodles (discard the flavor packets)

1 tablespoon vegetable oil

3 cloves garlic, minced

1-inch ginger, grated

1 red bell pepper, sliced

1 cup broccoli florets

1 cup snap peas

2 green onions, chopped

1/4 cup soy sauce

2 tablespoons sesame oil

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup

1 teaspoon red pepper flakes (adjust to taste)

Sesame seeds for garnish

Fresh cilantro for garnish (optional)

Instructions
 

Cook the Ramen: Bring a pot of water to a boil. Add the ramen noodles and cook for about 3-4 minutes, or until just tender. Drain and set aside.

    Prepare the Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken and cook until golden brown, about 5-7 minutes. Remove the chicken from the pan and set aside.

      Sauté Aromatics: In the same skillet, add minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant, then add the sliced red bell pepper, broccoli florets, and snap peas. Sauté for an additional 3-4 minutes until the vegetables are tender-crisp.

        Combine Ingredients: Return the cooked chicken to the skillet. Add the cooked ramen noodles, soy sauce, sesame oil, rice vinegar, honey (or maple syrup), and red pepper flakes. Toss everything together until well combined and heated through, about 2-3 minutes.

          Garnish and Serve: Remove from heat and stir in the chopped green onions. Serve the stir-fry in bowls, garnished with sesame seeds and fresh cilantro if desired.
