Chicken Scampi with Garlic Parmesan Rice

For the Chicken Scampi:

1 lb boneless, skinless chicken breasts, sliced into strips

3 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1/2 cup dry white wine (like Sauvignon Blanc)

1 lemon, juiced and zested

2 tablespoons unsalted butter

Salt and pepper, to taste

Fresh parsley, chopped for garnish

For the Garlic Parmesan Rice:

1 cup long-grain rice (jasmine or basmati works well)

2 cups chicken broth

3 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

1 tablespoon butter

Salt and pepper, to taste

Fresh chives or parsley, for garnish

Prepare the Rice: In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the rice and toast for another 1-2 minutes, stirring frequently.

    Cook Rice: Pour in the chicken broth and add salt to taste. Bring to a boil, then reduce to a simmer, cover, and cook for 15-18 minutes or until the rice is tender and the liquid is absorbed. Once done, remove from heat and stir in the butter and Parmesan cheese. Fluff with a fork and keep warm.

      Cook the Chicken: In a large skillet, heat 3 tablespoons of olive oil over medium-high heat. Season the sliced chicken with salt and pepper, then add it to the skillet. Cook for 5-7 minutes until golden brown and cooked through. Remove the chicken from the skillet and set aside.

        Make the Scampi Sauce: In the same skillet, reduce the heat to medium and add the minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant. Then, deglaze the pan with the white wine, scraping up any browned bits from the bottom. Let it simmer for about 3-5 minutes until reduced by half.

          Finish the Sauce: Stir in the lemon juice and zest, then return the cooked chicken to the skillet. Add the butter and toss until the chicken is coated in the sauce. Taste and adjust seasoning if necessary.

            Serve: Plate the garlic Parmesan rice on each dish, and top it with the chicken scampi. Garnish with chopped fresh parsley for a bright finish.
