8 oz spaghetti

2 tbsp olive oil

1 lb boneless, skinless chicken breasts, diced

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (14.5 oz) diced tomatoes, undrained

1 cup chicken broth

1 tsp Italian seasoning

½ tsp red pepper flakes (adjust to taste)

Salt and black pepper, to taste

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups fresh baby spinach

Fresh basil, for garnish

Instructions
 

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.

    Sauté Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken, season with salt and black pepper, and cook until browned (about 5–7 minutes). Remove chicken from the skillet and set aside.

      Sauté Vegetables: In the same skillet, add the chopped onion, bell pepper, and minced garlic. Cook until the onion becomes translucent (about 3–4 minutes).

        Add Tomatoes & Broth: Stir in the diced tomatoes with their juices, chicken broth, Italian seasoning, and red pepper flakes. Bring to a gentle simmer.

          Combine: Return the cooked chicken to the skillet. Stir in the heavy cream and allow the mixture to simmer for another 5 minutes, letting it thicken slightly.

            Toss with Spaghetti: Add the cooked spaghetti and fresh spinach to the skillet, tossing everything together until well combined and the spinach is wilted.

              Add Cheese: Gradually stir in the grated Parmesan cheese until melted and creamy. Adjust seasoning with additional salt and pepper if needed.

                Serve: Plate the chicken spaghetti, garnishing with fresh basil and an extra sprinkle of Parmesan cheese if desired.
