Chickpea Quinoa Bowl

1 cup quinoa, rinsed

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (any color), diced

1 avocado, sliced

1/4 red onion, finely chopped

1/4 cup fresh parsley, chopped

1/4 cup feta cheese, crumbled (optional)

2 tbsp olive oil

1 tbsp lemon juice

1 tsp cumin

1/2 tsp smoked paprika

Salt and pepper to taste

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa with 2 cups of water. Bring to a boil over medium-high heat, then reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it sit, covered, for another 5 minutes. Fluff with a fork.

    Prepare the Chickpeas: While the quinoa cooks, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the drained chickpeas, cumin, smoked paprika, salt, and pepper. Sauté for about 5-7 minutes until warmed through and slightly crispy. Remove from heat and set aside.

      Chop the Vegetables: In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, and parsley. Mix well and season with a sprinkle of salt and pepper.

        Assembly: In a serving bowl or plate, start with a base of quinoa. Top with the sautéed chickpeas, the fresh vegetable mixture, and sliced avocado. If using, sprinkle feta cheese on top for added flavor.

          Dressing: Drizzle the remaining tablespoon of olive oil and lemon juice over the bowl, giving everything a light toss to combine. Adjust seasoning if necessary.
