Chili Garlic Butter Clams

2 lbs fresh clams (littleneck or Manila, scrubbed)

4 tablespoons unsalted butter

1 tablespoon olive oil

6 cloves garlic (minced)

2 teaspoons red chili flakes (adjust for spice preference)

1/4 cup white wine (dry)

2 tablespoons fresh lemon juice

Zest of 1 lemon

2 tablespoons fresh parsley (chopped)

Salt and black pepper (to taste)

Crusty bread (for serving)

Instructions
 

Prepare the Clams: Start by rinsing the clams thoroughly under cold water to remove any sand or grit. Set them aside to drain.

    Melt the Butter: In a large pot or deep skillet, heat the olive oil and 2 tablespoons of butter over medium heat until melted.

      Sauté Garlic: Add the minced garlic to the pot and sauté for about 1-2 minutes until fragrant, being careful not to let it brown.

        Add Chili Flakes: Stir in the red chili flakes and cook for an additional 30 seconds to infuse the flavors.

          Cook the Clams: Pour in the white wine and lemon juice, then add the clams to the pot. Cover and cook for about 5-7 minutes, shaking the pot occasionally, until the clams open up. Discard any clams that do not open.

            Finish the Sauce: Once the clams are cooked, remove the pot from heat. Stir in the remaining 2 tablespoons of butter, lemon zest, and chopped parsley. Season with salt and black pepper to taste.

              Serve: Transfer the clams to a serving bowl, pouring the butter and garlic sauce over the top. Serve immediately with crusty bread to soak up the delicious sauce.
