8 large rice paper wrappers

1 cup vermicelli noodles

1 cup shredded carrots

1 cup red bell pepper, thinly sliced

1 cup cucumber, thinly sliced

1 cup purple cabbage, shredded

1 cup fresh mint leaves

1 cup fresh cilantro leaves

1 avocado, sliced

1/2 cup chili garlic sauce (adjust to taste)

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon sesame oil

Optional: Sesame seeds for garnish

Prepare the Vermicelli Noodles: Boil water in a pot and add the vermicelli noodles. Cook according to package instructions until al dente, then drain and cool under cold water. Set aside.

    Prepare the Vegetables: While the noodles are cooling, prep your vegetables. Julienne the carrots, red bell pepper, and cucumber. Shred the purple cabbage. Set all the veggies aside.

      Make the Dipping Sauce: In a small bowl, mix the chili garlic sauce, soy sauce, lime juice, and sesame oil. Adjust the spice level by adding more chili garlic sauce if desired.

        Soften the Rice Paper: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds, until it softens but isn't too mushy. Lay it flat on a clean surface.

          Assemble the Roll: Start layering the ingredients on the lower third of the softened rice paper; add a small amount of vermicelli noodles, followed by a mix of the vegetables, mint leaves, cilantro, and avocado slices. Be cautious not to overfill.

            Roll it Up: Fold the sides of the rice paper over the filling and then roll it tightly from the bottom up to form a neat roll. Repeat this process with the remaining ingredients.

              Garnish and Serve: Cut each roll in half on a diagonal and arrange them neatly on a serving platter. Sprinkle sesame seeds over the top and serve with the dipping sauce on the side.
