2 medium sweet potatoes, peeled and cubed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper to taste

Zest and juice of 2 limes

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh or frozen)

1 avocado, diced

1/4 cup fresh cilantro, chopped

1/2 cup feta cheese, crumbled (optional for a touch of creaminess)

Lime wedges for serving

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Sweet Potatoes: In a large bowl, toss the cubed sweet potatoes with olive oil, smoked paprika, cumin, chili powder, salt, and pepper until evenly coated.

      Roast the Sweet Potatoes: Spread the seasoned sweet potatoes on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, or until they are golden brown and tender, flipping halfway through cooking.

        Prepare the Black Beans and Corn: While the sweet potatoes are roasting, in a medium saucepan over medium heat, combine the black beans and corn. Add half of the lime juice and zest, seasoning with a little salt and pepper. Heat for about 5-7 minutes until warmed through.

          Assemble the Bowls: Once the sweet potatoes are done, remove them from the oven. In serving bowls, layer the roasted sweet potatoes, warm black beans and corn mixture, and diced avocado.

            Add Freshness: Sprinkle with chopped cilantro and crumbled feta cheese if using. Drizzle the remaining lime juice over the bowls, and add more zest for an extra punch.

              Serve Immediately: Serve with lime wedges on the side for an additional zesty kick.
