1 bag (16 oz) frozen waffle fries

1 lb ground beef or turkey (or vegetarian substitute)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 can (8 oz) tomato sauce

1 cup elbow macaroni (uncooked)

2 cups beef or vegetable broth

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon onion powder

1 teaspoon garlic powder

Salt and pepper, to taste

1 cup shredded cheddar cheese

1/2 cup sour cream (optional for serving)

Fresh cilantro or green onions, for garnish

Instructions
 

Cook the Waffle Fries: Preheat your oven and cook the frozen waffle fries according to package instructions until they are crispy and golden brown. Set aside.

    Brown the Meat: In a large skillet, over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. If using a vegetarian substitute, follow package instructions for cooking.

      Add Beans and Tomatoes: Once the meat is cooked, add kidney beans, black beans, diced tomatoes (with their juices), and tomato sauce into the skillet. Stir well to combine.

        Prepare the Macaroni: Pour in the uncooked elbow macaroni and pour the broth over the top. Add chili powder, cumin, onion powder, garlic powder, salt, and pepper. Stir until everything is well combined.

          Simmer: Bring the mixture to a simmer, then reduce the heat to low. Cover the skillet with a lid and cook for 15-20 minutes, stirring occasionally, until the macaroni is cooked and the sauce thickens.

            Add Cheese: Once the macaroni is cooked, sprinkle the shredded cheddar cheese on top. Cover again and let it melt for about 5 minutes.

              Layer the Waffle Fries: In a large serving platter or shallow bowl, layer the crispy waffle fries on the bottom. Spoon the chili mac mixture generously over the top.
