Chilled Couscous Stuffed Tomatoes

Ingredients
  

1 cup couscous

1 ¼ cups vegetable broth

4 medium-sized ripe tomatoes

1 small cucumber, diced

1 red bell pepper, diced

½ cup red onion, finely chopped

½ cup fresh parsley, chopped

¼ cup feta cheese, crumbled (optional)

3 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon dried oregano

Salt and pepper to taste

Instructions
 

Prepare the Couscous:

    - In a medium saucepan, bring the vegetable broth to a boil.

      - Stir in the couscous, cover the pot, and remove it from heat. Let it sit for about 5 minutes until the liquid is absorbed.

        - Fluff the couscous with a fork and allow it to cool.

          Prep the Tomatoes:

            - Slice off the tops of the tomatoes and scoop out the insides with a spoon to create hollow cavities. Set the tomato shells aside and chop the removed flesh finely.

              Make the Filling:

                - In a large mixing bowl, combine the cooled couscous, diced cucumber, diced red bell pepper, chopped red onion, chopped parsley, and chopped tomato flesh.

                  - Drizzle with olive oil and lemon juice, then sprinkle in the dried oregano, salt, and pepper. Mix everything well to incorporate.

                    Stuff the Tomatoes:

                      - Gently spoon the couscous mixture into each hollow tomato until they are generously filled. You can sprinkle feta cheese on top if desired.

                        Chill:

                          - Place the stuffed tomatoes in a fridge for at least 30 minutes to allow the flavors to meld and for the dish to chill thoroughly.

                            Serve:

                              - Arrange the chilled stuffed tomatoes on a serving platter. You can garnish with additional parsley or a drizzle of olive oil if you wish.
