2 cups Greek yogurt (plain, unsweetened)

1 cucumber, finely diced

1/2 cup fresh mint leaves, chopped (plus extra for garnish)

2 cloves garlic, minced

1/4 cup extra-virgin olive oil

1 cup vegetable broth (cold)

Juice of 1 lemon

Salt and pepper to taste

1/4 teaspoon ground cumin (optional)

1/4 cup radishes, thinly sliced (for garnish)

1/4 cup cherry tomatoes, halved (for garnish)

Instructions
 

In a large mixing bowl, combine the Greek yogurt, vegetable broth, and lemon juice. Whisk together until smooth and creamy.

    Add in the finely diced cucumber, chopped mint leaves, and minced garlic. Stir gently to combine all the ingredients.

      If desired, incorporate the ground cumin for an extra layer of flavor, mixing well.

        Season the soup with salt and pepper to taste. Adjust the seasoning according to your preference.

          Cover the bowl with plastic wrap or transfer the mixture into a sealed container. Refrigerate for at least 1 hour to allow the flavors to meld and the soup to chill.
