1 lb boneless, skinless chicken breasts

2 tablespoons olive oil

2 tablespoons chipotle ranch seasoning (store-bought or homemade)

Juice of 1 lime

Salt and pepper to taste

For the Chipotle Ranch Sauce:

1/2 cup mayonnaise

1/2 cup buttermilk

2 tablespoons chipotle sauce (more for extra heat if desired)

1 tablespoon fresh lime juice

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried dill

Salt and pepper to taste

For the Burrito Filling:

4 large flour tortillas

1 cup cooked brown rice or quinoa

1 cup black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1 avocado, sliced

1 cup chopped fresh cilantro

Sliced jalapeños (optional)

Lime wedges for serving

Marinate the Chicken: In a bowl, mix the olive oil, chipotle ranch seasoning, lime juice, salt, and pepper. Add the chicken breasts and coat well. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

    Prepare the Chipotle Ranch Sauce: In a small bowl, combine the mayonnaise, buttermilk, chipotle sauce, lime juice, garlic powder, onion powder, and dried dill. Whisk until smooth. Season with salt and pepper, and adjust to taste.

      Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Grill the marinated chicken for 6-8 minutes per side until cooked through and internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for 5 minutes, then slice into strips.

        Assemble the Burritos: Lay a tortilla flat on a clean surface. In the center, layer a scoop of brown rice, black beans, corn, grilled chicken strips, a sprinkle of cheese, avocado slices, cilantro, and jalapeños if using. Drizzle with chipotle ranch sauce.

          Wrap the Burrito: Fold the sides of the tortilla inwards, then roll from the bottom up tightly. Repeat with the remaining tortillas.
