Chocolate Chip Zucchini Muffins

1 cup grated zucchini (about 1 medium zucchini, squeezed dry)

1 cup all-purpose flour

1/2 cup whole wheat flour

1 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

1 tsp ground cinnamon

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/3 cup vegetable oil (or melted coconut oil)

2 large eggs

1 tsp vanilla extract

1 cup semi-sweet chocolate chips (plus extra for topping, if desired)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.

    Prepare the Zucchini: Grate the zucchini using a box grater or a food processor. Squeeze out excess moisture using a clean towel or cheesecloth. Set aside.

      Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, salt, and cinnamon until well combined.

        Mix Wet Ingredients: In another bowl, whisk together the granulated sugar, brown sugar, oil, eggs, and vanilla extract until smooth and well combined.

          Combine Mixtures: Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix.

            Add Zucchini and Chocolate Chips: Fold in the grated zucchini and chocolate chips until evenly distributed throughout the batter.

              Scoop into Muffin Tin: Use a spoon or an ice cream scoop to fill each muffin cup about 2/3 full with the batter. If desired, sprinkle a few extra chocolate chips on top of each muffin.

                Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, until the muffins are golden brown and a toothpick inserted into the center comes out clean.

                  Cool and Serve: Remove the muffins from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
