For the Chocolate Cake Layers:

1 ¾ cups all-purpose flour

1 ½ cups granulated sugar

¾ cup unsweetened cocoa powder

1 ½ teaspoons baking powder

1 ½ teaspoons baking soda

1 teaspoon salt

2 large eggs

1 cup whole milk

½ cup vegetable oil

2 teaspoons vanilla extract

1 cup boiling water

For the Chocolate Mousse Filling:

1 cup heavy whipping cream

8 oz semi-sweet chocolate, chopped

2 large eggs

2 tablespoons granulated sugar

1 teaspoon vanilla extract

For the Chocolate Ganache:

1 cup heavy cream

8 oz semi-sweet chocolate, chopped

2 tablespoons unsalted butter

For Garnish:

Whipped cream

Chocolate shavings

Fresh strawberries or raspberries

Instructions
 

Prepare the Cake Layers:

    - Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

      - In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

        - Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix on medium speed for about 2 minutes.

          - Carefully stir in the boiling water until the batter is smooth.

            - Divide the batter equally between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then remove from pans and transfer to wire racks to cool completely.

              Make the Chocolate Mousse Filling:

                - In a small saucepan over low heat, melt the chopped chocolate, stirring until smooth. Remove from the heat and allow it to cool slightly.

                  - In another bowl, whisk together the eggs and sugar until thick and pale. Add the vanilla extract and melted chocolate, mixing until combined.

                    - In a separate bowl, whip the heavy cream until soft peaks form, then gently fold it into the chocolate mixture until fully incorporated. Refrigerate the mousse for 30 minutes to firm up.

                      Prepare the Ganache:

                        - In a medium saucepan, heat the heavy cream until it's just boiling. Remove from heat and add the chopped chocolate and butter. Let it sit for a minute, then whisk until smooth. Allow the ganache to cool slightly.

                          Assemble the Cake:

                            - Place one chocolate cake layer on a serving plate. Spread half of the chocolate mousse evenly over the top.

                              - Add the second layer of chocolate cake and spread the remaining mousse on top.

                                - Pour ganache over the top of the cake, letting it drip down the sides.

                                  Garnish and Serve:

                                    - Decorate the top of the cake with dollops of whipped cream, chocolate shavings, and fresh fruits.
