For the Chocolate Mousse:

200g dark chocolate (70% cocoa or higher), chopped

3 large eggs, separated

50g granulated sugar

1 cup heavy cream

1 teaspoon vanilla extract

A pinch of salt

For the Whipped Cream:

1 cup heavy cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

For Garnishing:

Chocolate shavings or curls

Fresh berries (e.g., raspberries or strawberries)

Mint leaves (optional)

Instructions
 

Prepare the Chocolate Mousse:

    - Melt the dark chocolate in a heatproof bowl over simmering water (double boiler method), stirring until smooth. Remove from heat and let cool slightly.

      - In a separate bowl, whisk the egg yolks and granulated sugar together until pale and fluffy. Slowly add the melted chocolate and mix until fully incorporated. Stir in vanilla extract.

        - In another clean bowl, beat the egg whites with a pinch of salt until soft peaks form. Carefully fold the beaten egg whites into the chocolate mixture until no white streaks remain.

          - In a separate bowl, whip the heavy cream until soft peaks form, then gently fold it into the chocolate mixture until fully combined. Be careful not to deflate the mousse.

            Assemble the Parfaits:

              - Using clear glasses or parfait cups, spoon a layer of the chocolate mousse into the bottom (about one-third of the cup).

                - Follow with a layer of whipped cream: to prepare, whip one cup of heavy cream with powdered sugar and vanilla extract until soft peaks form. Spread or pipe a layer over the mousse.

                  - Repeat with another layer of chocolate mousse followed by whipped cream until the cups are filled, finishing with a layer of whipped cream on top.

                    Garnish and Chill:

                      - Top each parfait with chocolate shavings or curls, a few fresh berries, and if desired, a mint leaf for decoration.

                        - Refrigerate the parfaits for at least 2 hours to allow the flavors to meld and the mousse to set.

                          Serve:
