Ingredients

4 boneless, skinless chicken breasts

1/4 cup fresh lime juice (about 2-3 limes)

1/4 cup olive oil

1/2 cup fresh cilantro, finely chopped

4 cloves garlic, minced

1 tsp cumin

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

Optional garnish: lime wedges and extra cilantro

Instructions

Prepare the Marinade: In a medium mixing bowl, combine the fresh lime juice, olive oil, chopped cilantro, minced garlic, cumin, paprika, salt, and black pepper. Whisk together until well blended.

Marinate the Chicken: Place the chicken breasts in a large zip-top plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

Preheat the Grill: Preheat your grill to medium-high heat (around 400°F/200°C).

Grill the Chicken: Remove the chicken from the marinade and let excess marinade drip off. Place the chicken breasts on the grill. Cook for about 6-7 minutes on one side. Flip the chicken and grill for an additional 6-7 minutes, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the center.

Rest and Serve: Remove the grilled chicken from the grill and let it rest for 5 minutes. This helps retain the juices. Slice if desired, and serve with lime wedges and a sprinkle of fresh cilantro for a pop of color and extra flavor.
