Cinnamon Roll Stuffed French Toast

For the Cinnamon Roll Filling:

1 can of refrigerated cinnamon rolls (8-count) with icing

1/4 cup brown sugar

1 tbsp ground cinnamon

1/4 cup chopped walnuts (optional)

For the French Toast:

4 large eggs

1 cup whole milk

1 tsp vanilla extract

1/2 tsp ground cinnamon

1/4 tsp nutmeg

8 slices of thick brioche bread (or Texas toast)

Butter (for cooking)

For the Topping:

Maple syrup

Powdered sugar

Fresh berries (strawberries, blueberries, or raspberries)

Prepare the Cinnamon Roll Filling: Open the can of cinnamon rolls and set aside the icing. In a mixing bowl, combine the cinnamon roll dough, brown sugar, and ground cinnamon. If using, fold in chopped walnuts for added crunch. Cut each cinnamon roll into quarters.

    Make the French Toast Mixture: In a large bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and nutmeg until well combined.

      Assemble the French Toast:

        - Take a slice of brioche bread and create a pocket by cutting a slit through the middle without going all the way through.

          - Stuff each pocket with a portion of the cinnamon roll filling. Be generous, but make sure the filling doesn’t spill out.

            Heat the Pan: In a large skillet or griddle, melt 1–2 tablespoons of butter over medium heat.

              Dip and Cook: Dip each stuffed bread slice in the egg mixture, ensuring both sides are coated. Place on the skillet once the butter is sizzling. Cook for 3–4 minutes on each side or until golden brown and cooked through.

                Serve: Remove from the skillet and drizzle each piece with maple syrup and top with powdered sugar. Finish with a handful of fresh berries for a refreshing touch.
