Cinnamon Sugar Pretzel Bites

1 ½ cups warm water (110°F to 115°F)

1 packet (2 ¼ teaspoons) active dry yeast

2 tablespoons granulated sugar

4 cups all-purpose flour

1 teaspoon salt

⅓ cup baking soda

1 large egg (beaten, for egg wash)

½ cup unsalted butter (melted)

¾ cup granulated sugar (for coating)

2 tablespoons ground cinnamon

Instructions
 

Activate the Yeast: In a large mixing bowl, combine warm water, yeast, and 2 tablespoons of sugar. Stir gently and let sit for about 5–10 minutes, until foamy.

    Make the Dough: Add the flour and salt to the yeast mixture. Stir with a wooden spoon until the dough starts to come together. Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.

      First Rise: Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

        Prepare the Baking Soda Solution: In a medium saucepan, bring 8 cups of water to a gentle boil. Add the baking soda (be careful, it will foam up!). Reduce heat to low and let it simmer.

          Shape the Pretzel Bites: Once the dough has risen, punch it down and turn it out onto a floured surface. Divide the dough into four equal pieces. Roll each piece into a long rope, then cut it into 1-inch segments to form bite-sized pieces.

            Boil the Bites: Carefully drop the pretzel bites into the simmering baking soda solution, about 8-10 at a time. Boil for about 30 seconds, then remove with a slotted spoon and place on a baking sheet lined with parchment paper.
