Ingredients

1 large orange, peeled and segmented

1 large grapefruit, peeled and segmented

1 cup strawberries, hulled and halved

1 cup blueberries

1 cup pineapple, diced

1 cup kiwi, peeled and sliced

3 tablespoons fresh mint leaves, chopped, plus extra for garnish

2 tablespoons honey (or agave syrup for a vegan option)

1 tablespoon lime juice

Zest of 1 lime

Instructions

Prepare the Fruit: In a large mixing bowl, combine the orange and grapefruit segments. Add the halved strawberries, blueberries, diced pineapple, and sliced kiwi. Gently toss the fruits together to combine them, being careful not to mash any of the berries.

Make the Dressing: In a small bowl, whisk together the honey, lime juice, and lime zest until well combined. This dressing will add a refreshing tangy sweetness to the fruit.

Combine Dressing and Fruit: Drizzle the dressing over the mixed fruit. Sprinkle the chopped fresh mint leaves on top. Gently toss everything together until the fruits are evenly coated with the dressing and mint.

Chill: Cover the bowl with plastic wrap or a lid, and refrigerate the salad for at least 30 minutes. This allows the flavors to meld and the salad to become chilled.

Serve: Before serving, give the salad a gentle toss. Transfer to a serving dish or individual bowls. Garnish with extra mint leaves for an aromatic touch.

Enjoy: This vibrant fruit salad is perfect as a refreshing side dish or a healthy dessert!
