Classic Baked Macaroni and Cheese

8 ounces elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups milk (preferably whole or 2%)

2 cups shredded sharp Cheddar cheese

1 cup shredded Gruyère cheese

1 teaspoon Dijon mustard

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and black pepper to taste

½ cup breadcrumbs (panko preferred)

2 tablespoons melted butter (for topping)

Optional: ¼ teaspoon smoked paprika for added flavor

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 2.5-quart baking dish with a little butter or cooking spray.

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

      Make the Roux: In a medium saucepan, melt the 2 tablespoons of unsalted butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes until it's bubbly and slightly golden, creating a roux.

        Create the Cheese Sauce: Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, whisking frequently, until the mixture thickens, about 5-7 minutes. Remove from heat and add the shredded Cheddar and Gruyère cheeses gradually, stirring until fully melted and smooth.

          Season the Sauce: Stir in the Dijon mustard, garlic powder, onion powder, salt, and black pepper. Taste and adjust seasoning as necessary.

            Combine Pasta and Sauce: In a large mixing bowl, combine the cooked macaroni with the cheese sauce until pasta is well coated.

              Prepare for Baking: Pour the macaroni and cheese mixture into the prepared baking dish, spreading it evenly.

                Add Topping: In a small bowl, combine the breadcrumbs with the melted butter and optionally sprinkle in the smoked paprika. Mix well. Evenly sprinkle this breadcrumb topping over the macaroni and cheese.
