Ingredients

1 lb (450g) ground lamb or beef

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium carrots, diced

1 cup frozen peas

1 tablespoon tomato paste

1 tablespoon Worcestershire sauce

1 cup beef broth

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

4 large potatoes, peeled and cubed

4 tablespoons unsalted butter

1/2 cup milk

1 cup shredded cheddar cheese (optional for topping)

Instructions

Prepare the Mashed Potatoes: In a large pot, bring salted water to a boil. Add the cubed potatoes and cook for 15-20 minutes or until tender. Drain the potatoes and return them to the pot. Add the butter and milk, then mash until smooth. Season with salt and pepper to taste.

Cook the Filling: In a large skillet over medium heat, add the ground lamb or beef and cook until browned. Drain excess fat, if necessary. Add the chopped onions and minced garlic to the skillet and sauté for about 3 minutes until the onions are translucent.

Add Vegetables and Flavor: Stir in the diced carrots, frozen peas, tomato paste, Worcestershire sauce, beef broth, dried thyme, and dried rosemary. Season with salt and pepper. Let the mixture simmer for about 10 minutes, allowing the flavors to meld together.

Assemble the Pie: Preheat your oven to 400°F (200°C). In a baking dish, spread the meat and vegetable filling evenly on the bottom. Top with the mashed potatoes, spreading them evenly to cover the filling completely. For an extra touch, you can use a fork to create peaks on the mashed potatoes.

Optional Cheese Topping: If desired, sprinkle shredded cheddar cheese over the mashed potatoes for added flavor.

Bake: Place the assembled Shepherd's Pie in the preheated oven and bake for 20-25 minutes, or until the top is golden and bubbly.

Serve: Remove from oven and let it cool for 5 minutes before serving. Scoop individual portions, garnish with fresh herbs if desired, and enjoy this comforting classic!
