Ingredients

12 oz egg noodles

2 cans (5 oz each) tuna in water, drained and flaked

1 cup frozen peas

1 cup creamy mushroom soup (store-bought or homemade)

1 cup sour cream

1 cup shredded sharp cheddar cheese, divided

1/2 cup milk

1/2 cup chopped onion

1 cup crushed buttery cracker crumbs (like Ritz)

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon black pepper

1 teaspoon salt

Fresh parsley, chopped (for garnish)

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C).

Cook Noodles: In a large pot of salted boiling water, cook the egg noodles according to package instructions until al dente. Drain and set aside.

Sauté Onion: In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

Mix Casserole Ingredients: In a large mixing bowl, combine the drained tuna, sautéed onion, frozen peas, creamy mushroom soup, sour cream, half of the cheddar cheese, milk, garlic powder, black pepper, and salt. Stir until well incorporated.

Combine Noodles: Add the cooked egg noodles to the tuna mixture and stir gently until everything is evenly mixed.

Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch baking dish, spreading it out evenly.

Prepare Topping: In a bowl, mix the crushed cracker crumbs with the remaining cheddar cheese. Sprinkle this mixture evenly over the casserole.

Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until bubbly and golden on top.

Serve: Remove from the oven and let it cool slightly before serving. Garnish with freshly chopped parsley.
