Ingredients

For the crust:

1 cup graham cracker crumbs

1/3 cup shredded coconut (sweetened or unsweetened)

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the cheesecake filling:

16 oz (2 packages) cream cheese, softened

3/4 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 cup coconut cream

1/2 cup shredded coconut (sweetened or unsweetened)

1 tablespoon all-purpose flour (optional, for stability)

For the topping:

1/2 cup whipped cream (store-bought or homemade)

Toasted coconut flakes (for garnish)

Lime zest (for a refreshing touch, optional)

Instructions

Preheat the oven: Begin by preheating your oven to 350°F (175°C). Prepare a 9x9-inch baking pan by lining it with parchment paper, allowing some overhang for easy removal later.

Prepare the crust: In a mixing bowl, combine the graham cracker crumbs, shredded coconut, sugar, and melted butter. Mix well until the mixture resembles wet sand. Press this mixture firmly into the bottom of the prepared baking pan, creating an even layer.

Bake the crust: Put the crust in the oven and bake for about 10 minutes until it’s lightly golden and fragrant. Remove from the oven and let it cool slightly while you prepare the filling.

Make the filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add the granulated sugar and beat until well combined.

Add the remaining filling ingredients: Mix in the vanilla extract, then one by one, add the eggs, mixing well after each addition. Pour in the coconut cream and combine until smooth. Fold in the shredded coconut and, if desired, the flour for extra stability. Mix until just combined.

Pour the filling: Carefully pour the cheesecake filling over the cooled crust, spreading it evenly with a spatula.

Bake the cheesecake bars: Bake the cheesecake bars in the preheated oven for 25-30 minutes, or until the edges are set and the center is slightly jiggly but not liquid. The cheesecake will continue to set as it cools.

Cool down: Once done, remove from the oven and allow the bars to cool in the pan for about 30 minutes at room temperature. Then transfer to the refrigerator and chill for at least 4 hours, or preferably overnight.

Serve: Once chilled, lift the bars out of the pan using the parchment paper. Cut them into squares. Top each square with a dollop of whipped cream and a sprinkle of toasted coconut flakes. For an extra zing, finish with a hint of lime zest if desired.

Enjoy: Indulge in your delicious Coconut Dream Cheesecake Bars with family and friends!
