Coconut Curry Lentil Stew

1 cup red lentils, rinsed and drained

1 can (14 oz) coconut milk

2 cups vegetable broth

1 tablespoon coconut oil

1 medium onion, diced

3 cloves garlic, minced

1-inch piece ginger, grated

1 tablespoon red curry paste (adjust to spice preference)

1 teaspoon turmeric powder

1 teaspoon cumin seeds

1 bell pepper (any color), diced

2 medium carrots, diced

1 cup spinach leaves, packed

1 tablespoon soy sauce or tamari

1 tablespoon lime juice

Salt and pepper to taste

Fresh cilantro for garnish

Sauté Aromatics: In a large pot, heat the coconut oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic, grated ginger, and cumin seeds, and cook for an additional 2 minutes until fragrant.

    Add Vegetables and Spices: Add the red curry paste, turmeric powder, bell pepper, and carrots to the pot. Stir everything together well and cook for another 3-4 minutes, allowing the vegetables to soften and the spices to bloom.

      Incorporate Lentils and Liquid: Pour in the rinsed red lentils, vegetable broth, and coconut milk. Stir to combine, then bring the mixture to a gentle boil.

        Simmer the Stew: Once boiling, reduce the heat to low, cover, and let it simmer for about 25-30 minutes, or until the lentils are tender and the stew has thickened. Stir occasionally to prevent sticking.
