Cold Lentil & Veggie Salad

Ingredients
  

1 cup green or brown lentils, rinsed

2 ½ cups vegetable broth or water

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 bell pepper (red or yellow), diced

1 small red onion, finely chopped

1 cup fresh parsley, chopped

1/2 cup feta cheese, crumbled (optional)

1/4 cup olive oil

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1 clove garlic, minced

Salt and pepper to taste

Instructions
 

Cook the Lentils: In a medium saucepan, bring the vegetable broth or water to a boil. Add the rinsed lentils, reduce the heat, and let simmer uncovered for 20-25 minutes, or until the lentils are tender but not mushy. Drain and let cool.

    Prepare the Vegetables: While the lentils are cooking, chop the cherry tomatoes, cucumber, bell pepper, red onion, and parsley. If using, crumble the feta cheese and set aside.

      Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, minced garlic, salt, and pepper until emulsified.

        Combine the Salad: In a large mixing bowl, add the cooled lentils, chopped vegetables, and feta cheese (if using). Drizzle the dressing over the salad and toss gently to combine, ensuring everything is well coated.

          Chill and Serve: Let the salad sit for at least 30 minutes in the refrigerator to allow the flavors to meld. Serve cold or at room temperature.
