8 oz soba noodles

14 oz firm tofu, cubed

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon sriracha (adjust for heat preference)

1 medium cucumber, julienned

1 medium carrot, grated

1 ripe avocado, sliced

3 green onions, chopped

1/4 cup cilantro leaves, chopped

1 tablespoon black sesame seeds (for garnish)

1 tablespoon toasted peanuts or cashews (optional, for garnish)

Lime wedges (for serving)

Instructions
 

Cook the Soba Noodles:

    - Bring a large pot of water to a boil. Add the soba noodles and cook according to package instructions (usually about 6-8 minutes) until al dente. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

      Prepare the Tofu:

        - In a non-stick skillet, heat 2 tablespoons of oil over medium heat.

          - Add the cubed tofu and cook until golden brown on all sides, approximately 6-8 minutes.

            - Drizzle with soy sauce, sesame oil, and sriracha during the last minute of cooking, tossing to coat evenly. Remove from heat and let cool.

              Prepare the Vegetables:

                - While the noodles and tofu cool, prepare the vegetables. Julienne the cucumber, grate the carrot, and slice the avocado.

                  Assemble the Bowl:

                    - In a large mixing bowl, combine the cooled soba noodles, cooked tofu, cucumber, carrot, and half of the green onions and cilantro. Toss gently to combine.

                      Serve:

                        - Divide the noodle mixture into serving bowls. Top with avocado slices, sprinkle with the remaining green onions, cilantro, black sesame seeds, and peanuts or cashews (if using). Serve with lime wedges on the side.

                          Enjoy:

                            - Squeeze fresh lime juice over the bowl just before eating to enhance the flavors.
