Cold Peanut Sesame Noodles

8 oz. (225g) spaghetti or rice noodles

1/4 cup creamy peanut butter

2 tablespoons sesame oil

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1/4 teaspoon red pepper flakes (adjust to taste)

1 cup shredded carrots

1 red bell pepper, thinly sliced

1 cucumber, julienned

1/4 cup scallions, chopped

1/4 cup chopped cilantro (optional)

Sesame seeds for garnish

Cook the Noodles: In a pot of boiling water, cook the spaghetti or rice noodles according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.

    Prepare the Peanut Sauce: In a medium mixing bowl, combine the creamy peanut butter, sesame oil, soy sauce, rice vinegar, honey or maple syrup, minced garlic, grated ginger, and red pepper flakes. Mix well until smooth and creamy. If the sauce is too thick, add a little warm water a tablespoon at a time until desired consistency is reached.

      Combine Ingredients: In a large mixing bowl, add the cooled noodles, shredded carrots, sliced red bell pepper, julienned cucumber, and chopped scallions. Pour the peanut sauce over the noodle mixture and toss everything together gently until well combined.

        Serve: Once everything is well coated, transfer the noodle salad to serving plates. Garnish with chopped cilantro (if using) and a sprinkle of sesame seeds.

          Chill (Optional): For an even more refreshing taste, cover and refrigerate the noodles for at least 30 minutes before serving.
