Cold Thai Noodle Salad

8 oz rice noodles

1 cup shredded carrots

1 cup red bell pepper, thinly sliced

1 cup cucumber, julienned

1 cup red cabbage, shredded

1/2 cup fresh cilantro, chopped

1/2 cup green onions, sliced

1/4 cup roasted peanuts, chopped (optional)

For the Dressing:

1/4 cup peanut butter (or almond butter)

3 tbsp soy sauce

2 tbsp fresh lime juice

2 tbsp honey or maple syrup

1 tbsp sesame oil

1 tsp grated ginger

1 clove garlic, minced

1 tsp chili paste (or to taste)

Instructions
 

Cook the Noodles: Bring a large pot of water to a boil. Add rice noodles and cook according to package instructions (typically 5-7 minutes). Once cooked, drain and rinse under cold water to stop cooking. Drain well.

    Prepare the Vegetables: While the noodles are cooking, prepare the vegetables. In a large mixing bowl, combine shredded carrots, red bell pepper, cucumber, red cabbage, cilantro, and green onions.

      Make the Dressing: In a small bowl, whisk together the peanut butter, soy sauce, lime juice, honey, sesame oil, grated ginger, minced garlic, and chili paste. Adjust the consistency by adding a little water if it's too thick—aim for a pourable dressing.

        Combine: Add the cooled noodles to the bowl of vegetables. Pour the dressing over the noodle and veggie mixture, and toss gently until well combined. Make sure the noodles are fully coated in the dressing.

          Chill: Cover the salad and let it chill in the refrigerator for at least 30 minutes. This allows the flavors to meld together beautifully.

            Serve: Before serving, give the salad another good toss. Optionally, sprinkle roasted peanuts over the top for added crunch. Serve cold and enjoy!
