Cold Tuna Macaroni Salad

Ingredients
  

2 cups elbow macaroni

1 can (15 oz) tuna in water, drained

1 cup frozen peas, thawed

1/2 cup celery, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

2 tablespoons fresh parsley, chopped (for garnish)

Instructions
 

Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package directions until al dente. Drain and rinse under cold water to cool. Set aside.

    In a large mixing bowl, combine the drained tuna, thawed peas, diced celery, red bell pepper, and red onion. Mix well to distribute the ingredients evenly.

      In a separate smaller bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, onion powder, salt, and pepper until smooth and well blended.

        Add the cooked macaroni to the bowl with the tuna and vegetables. Pour the dressing over the salad and gently mix until everything is well coated with the creamy dressing.

          Taste and adjust seasoning with additional salt and pepper if needed.

            Cover the salad with plastic wrap or a lid and refrigerate for at least 1 hour to allow flavors to meld.

              Before serving, give the salad a gentle stir. Garnish with chopped fresh parsley for a touch of color and freshness.
