1 pound boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 can (10 oz) green enchilada sauce

1 cup chicken broth

1 cup corn kernels (fresh or frozen)

1 black beans can (15 oz), drained and rinsed

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon smoked paprika

2 cups cooked rice (white or brown)

2 cups shredded cheese (cheddar or Monterey Jack)

Fresh cilantro, chopped (for garnish)

1 avocado, diced (for serving)

Lime wedges (for serving)

Instructions
 

Sauté Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken. Season with salt and pepper. Cook for 5-7 minutes or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

    Cook Aromatics: In the same skillet, add the onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for another 1 minute until fragrant.

      Combine Ingredients: Add the green enchilada sauce, chicken broth, corn, black beans, cooked rice, ground cumin, chili powder, and smoked paprika to the skillet. Stir well to combine all the ingredients.

        Add Chicken: Return the cooked chicken to the skillet. Stir everything together, and allow it to simmer for about 5-7 minutes on medium heat until the mixture is heated through and slightly thickened.

          Cheesy Finish: Reduce heat to low, and sprinkle the shredded cheese evenly across the top. Cover the skillet and let it cook for an additional 2-3 minutes, or until the cheese is melted and bubbly.
