Comforting Rustic Sausage and Peppers Bake

1 pound Italian sausage (mild or spicy, your choice), casings removed

2 tablespoons olive oil

1 large onion, sliced

3 cloves garlic, minced

2 bell peppers (red and yellow), sliced into strips

1 zucchini, sliced into half-moons

1 can (14.5 oz) diced tomatoes, undrained

1 teaspoon dried oregano

1 teaspoon dried basil

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 cup shredded mozzarella cheese

Fresh basil or parsley, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Cook the Sausage: In a large skillet over medium heat, add the olive oil and crumble in the Italian sausage. Cook until browned and cooked through, about 5-7 minutes. Use a wooden spoon to break it into smaller pieces. Drain any excess fat if necessary.

      Sauté the Vegetables: To the skillet with the cooked sausage, add the sliced onion and garlic. Sauté for 3-4 minutes until the onion becomes translucent. Then, add the bell peppers and zucchini, stirring for another 5 minutes until softened.

        Combine with Tomatoes: Stir in the can of diced tomatoes (with juice), oregano, basil, red pepper flakes, and season with salt and pepper. Mix well and cook for an additional 2-3 minutes until heated through.

          Bake the Mixture: Transfer the sausage and pepper mixture into a greased 9x13 inch (or similar sized) baking dish. Spread it out evenly.

            Add Cheese: Sprinkle the shredded mozzarella cheese on top of the sausage and peppers.
