½ teaspoon baking powder

½ cup unsalted butter, softened

½ cup brown sugar, packed

¼ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup chocolate chips

For the Blue Velvet Cake:

1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 tablespoon cocoa powder

½ cup buttermilk

Blue food coloring

For the Cream Cheese Frosting:

8 oz cream cheese, softened

½ cup unsalted butter, softened

4 cups powdered sugar

1 teaspoon vanilla extract

1 tablespoon milk (optional, for consistency)

For Additional Toppings:

Crushed chocolate chip cookies

Mini chocolate chips

Blue sprinkles

Instructions
 

Prepare the Cookie Layers:

    - Preheat your oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper.

      - In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.

        - In a mixing bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy. Add in the egg and vanilla, mixing well.

                - In a separate bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cocoa powder, and salt.

                  - In a large mixing bowl, cream the softened butter and sugar until light. Beat in the eggs, one at a time, followed by the vanilla extract.

                    - Gradually mix in the dry ingredients, alternating with the buttermilk until fully combined. Add blue food coloring until you achieve your desired shade of blue.

                      - Pour the batter into a greased 9x9 inch baking pan and bake at 350°F (175°C) for 25-30 minutes or until a toothpick inserted comes out clean. Let cool completely.

                        Prepare the Cream Cheese Frosting:

                          - In a bowl, beat together the softened cream cheese and butter until smooth. Gradually add powdered sugar, mixing on low speed. Stir in vanilla extract and milk as needed to reach your desired consistency.
