Cool Mint Oreo Icebox Cake

2 packages of Mint Oreo cookies (14.3 oz each)

1 cup heavy whipping cream

1 cup powdered sugar

1 tsp vanilla extract

8 oz cream cheese, softened

1 cup cool whip (thawed)

½ cup milk (for dipping cookies)

1 tablespoon peppermint extract (optional, for extra mint flavor)

Fresh mint leaves (for garnish)

Prep the Cream Mixture: In a large mixing bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined.

    Whip the Cream: In another bowl, whip the heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture until combined, taking care not to deflate the whipped cream. If desired, add in the peppermint extract for an extra kick of mint flavor.

      Assemble the Layers: Pour the milk into a shallow dish. Take one Mint Oreo at a time and quickly dip it into the milk (about 1-2 seconds) just to soften, then place it in a single layer in the bottom of a 9x13 inch baking dish.

        Layer the Filling: Spread a layer of the cream mixture over the Oreo layer. Repeat the dipping and layering process until you have about 4 layers of Oreo cookies stacked with cream filling in between (ending with the cream mixture on top).

          Chill: Cover the baking dish with aluminum foil or plastic wrap and refrigerate for at least 4 hours, or overnight for best results. This allows the cookies to soften and absorb moisture from the cream.

            Garnish and Serve: Before serving, top the cake with the remaining cool whip, and garnish with crushed Mint Oreos and fresh mint leaves for an extra fresh touch. Slice and enjoy this refreshing dessert!
