Corn & Avocado Salad with Honey Lime Dressing

2 cups fresh corn kernels (about 3-4 ears of corn, cooked)

2 ripe avocados, diced

1 medium red bell pepper, diced

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

1/4 cup fresh cilantro, chopped

Juice of 2 limes

2 tablespoons honey

3 tablespoons olive oil

Salt and pepper to taste

Optional: 1 jalapeño, minced (for a spicy kick)

Instructions
 

Prepare the Corn: If using fresh corn, bring a pot of water to a boil. Add the corn ears and cook for about 5-7 minutes until tender. Remove, let cool, and then cut the kernels off the cob. If using frozen corn, simply thaw and set aside.

    Chop the Vegetables: In a large mixing bowl, combine the diced avocados, red bell pepper, red onion, cherry tomatoes, and (if using) jalapeño. Gently toss these ingredients to mix.

      Make the Dressing: In a small bowl, whisk together the lime juice, honey, olive oil, a pinch of salt, and pepper until well combined. Adjust the sweet and sour balance by adding more honey or lime juice if desired.

        Combine Everything: Add the cooked corn and chopped cilantro to the bowl with the vegetables, then drizzle the honey lime dressing over the top. Gently toss everything together to ensure the dressing coats all ingredients without mashing the avocados.

          Taste and Adjust: Taste the salad and add more salt, pepper, or lime juice if needed to suit your preference.
