Cottage Cheese Egg Bake

2 cups cottage cheese (low-fat or full-fat based on preference)

6 large eggs

1 cup fresh spinach, chopped

1 cup cherry tomatoes, halved

1 cup bell peppers, diced (red, yellow, or green)

½ cup onion, finely chopped

1 cup shredded cheese (cheddar or mozzarella)

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

1 tablespoon olive oil

Fresh herbs for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Sauté Vegetables: In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and bell peppers. Sauté for around 3-4 minutes until the onion becomes translucent. Add the chopped spinach and cook for an additional 2 minutes until wilted. Remove from heat and let cool slightly.

      Mix Egg and Cottage Cheese: In a large mixing bowl, whisk together the eggs, garlic powder, oregano, salt, and pepper. Next, gently stir in the cottage cheese until well combined.

        Combine Ingredients: Fold in the sautéed vegetables and halved cherry tomatoes into the egg and cottage cheese mixture. Finally, add half of the shredded cheese, mixing until everything is well incorporated.

          Transfer to Baking Dish: Grease a 9x9 inch (23x23 cm) baking dish or an equivalent sized casserole dish with a little olive oil. Pour the mixture into the prepared dish, spreading it out evenly.

            Top with Cheese: Sprinkle the remaining shredded cheese on top of the egg bake for a cheesy finish.

              Bake: Place the dish in the preheated oven and bake for 35-40 minutes, or until the egg is set and the top is golden and bubbly.
