Cottage Cheese Egg Bake

1 cup cottage cheese (preferably small curd)

6 large eggs

1 cup fresh spinach, chopped

1 red bell pepper, diced

½ onion, finely chopped

1 cup shredded cheese (cheddar or mozzarella)

½ teaspoon garlic powder

½ teaspoon onion powder

¼ teaspoon salt

¼ teaspoon black pepper

2 tablespoons olive oil

Fresh herbs for garnish (optional: parsley or chives)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C).

    Sauté the Vegetables: In a medium skillet, heat the olive oil over medium heat. Add the chopped onion and red bell pepper and sauté for about 4-5 minutes until they are softened. Stir in the chopped spinach and cook for another 2 minutes until wilted. Remove from heat and let it cool slightly.

      Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs until well beaten. Add the cottage cheese, sautéed vegetables, garlic powder, onion powder, salt, and black pepper. Mix until all ingredients are fully combined.

        Add the Cheese: Fold in the shredded cheese, reserving a small amount to sprinkle on top later.

          Transfer to Baking Dish: Pour the egg and cottage cheese mixture into a greased baking dish (approximately 8x8 inches or similar size).

            Bake: Sprinkle the reserved cheese on top of the mixture. Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

              Cool and Serve: Once baked, allow the dish to cool for about 5 minutes. Garnish with fresh herbs if desired, then cut into squares and serve warm.
