Cottage Cheese Egg Bites

1 cup cottage cheese

4 large eggs

1 cup fresh spinach, chopped

1/2 cup bell peppers, diced (any color)

1/4 cup green onions, sliced

1/2 cup shredded cheese (cheddar, mozzarella, or your choice)

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Olive oil spray or muffin liners for greasing the pan

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a muffin tin with olive oil spray or line with muffin liners to prevent sticking.

    Blend the Mixture: In a large mixing bowl, combine the cottage cheese and eggs. Using an immersion blender or a regular blender, blend the mixture until smooth and creamy.

      Add Veggies and Flavor: Stir in the chopped spinach, diced bell peppers, sliced green onions, shredded cheese, garlic powder, salt, and black pepper. Mix everything together until well combined.

        Fill the Muffin Tin: Pour the egg and cottage cheese mixture into the prepared muffin tin. Fill each cup about 3/4 of the way full, as the egg bites will puff up while baking.

          Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg bites are firm and slightly golden on top. A toothpick inserted into the center should come out clean.

            Cool and Serve: Once baked, remove the muffin tin from the oven and let it cool for about 5 minutes. Carefully run a knife around the edges of the bites to loosen them and gently pop them out.

              Enjoy: Serve warm or let them cool completely and store in an airtight container in the refrigerator for up to 5 days. These egg bites can also be reheated in the microwave for a quick breakfast on the go!
