Ingredients

1 can (15 oz) chickpeas, drained and rinsed

2 cups fresh spinach, roughly chopped

1 medium onion, finely chopped

3 cloves garlic, minced

1-inch piece of ginger, grated

1 can (14 oz) coconut milk

1 cup vegetable broth

2 tablespoons curry powder

1 teaspoon ground cumin

1/2 teaspoon ground turmeric

1/2 teaspoon red chili flakes (adjust to taste)

1 tablespoon olive oil

Salt and pepper to taste

1 tablespoon lemon juice

Fresh cilantro, for garnish (optional)

Instructions

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes translucent. Then, add the minced garlic and grated ginger, cooking for an additional 2 minutes until fragrant.

Spice it Up: Stir in the curry powder, ground cumin, ground turmeric, and red chili flakes. Cook for about 1 minute, stirring constantly, to toast the spices and release their flavors.

Add Chickpeas and Liquid: Pour in the drained chickpeas, coconut milk, and vegetable broth. Stir well to combine all the ingredients and bring the mixture to a gentle simmer.

Simmer: Let the stew simmer for about 15-20 minutes, allowing the flavors to meld together. Stir occasionally and add salt and pepper to taste.

Incorporate Spinach: After simmering, add the chopped fresh spinach to the pot. Cook for an additional 5 minutes until the spinach wilts and softens.

Finishing Touch: Remove the pot from heat and stir in the lemon juice for brightness. Taste and adjust seasoning if necessary.

Serve: Ladle the curry stew into bowls, garnishing with fresh cilantro if desired. Serve hot with rice, quinoa, or crusty bread for a cozy meal.
