1 cup green or brown lentils, rinsed

1 medium onion, diced

2 cloves garlic, minced

2 medium sweet potatoes, peeled and diced

3 medium carrots, sliced

2 stalks celery, diced

1 can (14 oz) diced tomatoes

6 cups vegetable broth

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley or cilantro for garnish (optional)

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes, until softened. Add the minced garlic and sauté for another minute until fragrant.
