Ingredients

1 cup all-purpose flour

1/2 cup canned pumpkin puree

1 tablespoon brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

1 cup milk (dairy or plant-based)

1 large egg

2 tablespoons melted butter or coconut oil

Optional: maple syrup, whipped cream, or chopped nuts for serving

Instructions

Mix Dry Ingredients: In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, spices (cinnamon, nutmeg, ginger), and salt until well combined.

Combine Wet Ingredients: In another bowl, mix the pumpkin puree, milk, egg, and melted butter (or coconut oil) until smooth.

Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Stir gently until just combined; it's okay if the batter is a bit lumpy—don't overmix!

Heat the Pan: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.

Cook the Pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes. Flip gently and cook for another 2 minutes or until golden brown.

Serve: Stack the pancakes on a plate and top with your choice of maple syrup, whipped cream, or chopped nuts. Enjoy your cozy fall breakfast!
