4 large ripe peaches, peeled and sliced

1/4 cup granulated sugar

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

1/4 teaspoon nutmeg

1 tablespoon lemon juice

1 cup rolled oats

1/2 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/4 teaspoon cayenne pepper (adjust to taste)

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Peach Filling: In a large mixing bowl, combine the sliced peaches with granulated sugar, vanilla extract, cinnamon, nutmeg, lemon juice, and a pinch of salt. Toss gently to coat the peaches evenly. Let the mixture sit for about 10 minutes to allow the natural juices to develop.

      Make the Crumble Topping: In a separate bowl, mix together the rolled oats, all-purpose flour, brown sugar, baking powder, and salt. Add the melted butter and cayenne pepper, stirring until the mixture resembles coarse crumbs.
