Ingredients

1 pound lump crab meat, picked over for shells

1/2 cup cream cheese, softened

1/4 cup mayonnaise

2 green onions, finely chopped

1 tablespoon Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon Old Bay seasoning

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

10 egg roll wrappers

Vegetable oil, for frying

Sweet chili sauce, for serving

Instructions

Prepare the Filling: In a mixing bowl, combine cream cheese, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, garlic powder, salt, and black pepper. Mix until smooth and well blended.

Add Crab Meat: Gently fold in the lump crab meat and chopped green onions, being careful not to break up the crab meat too much. Set aside.

Form the Egg Rolls: Lay one egg roll wrapper on a clean surface with a corner pointing toward you. Place about 2 tablespoons of the crab filling in the center of the wrapper.

Roll Up: Lift the bottom corner of the wrapper over the filling, then fold the sides in, and roll tightly upwards to seal. Use a little water on the edges to help seal the roll. Repeat with the remaining wrappers and filling.

Heat the Oil: In a deep frying pan or a pot, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Egg Rolls: Carefully place a few egg rolls in the hot oil at a time, taking care not to overcrowd the pan. Fry for about 3-4 minutes on each side until golden brown and crispy.

Drain: Use a slotted spoon to remove the egg rolls from the oil and place them on a plate lined with paper towels to drain excess oil.

Serve: Once all egg rolls are fried, serve them hot with sweet chili sauce for dipping.
