1 pound breakfast sausage (regular or spicy, your choice)

1 cup diced cooked bacon (about 6 slices)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

6 large eggs

2 cups milk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup chopped green onions (for garnish)

1/4 cup sour cream (optional, for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Brown the Sausage: In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it apart with a wooden spoon. Drain excess fat as necessary.

      Prepare the Casserole Dish: In a greased 9x13 inch casserole dish, spread an even layer of frozen tater tots across the bottom.

        Layer the Ingredients:

          - Once the sausage is cooked, distribute it over the tater tots.

            - Sprinkle the diced bacon over the sausage.

              - Add the shredded cheddar and Monterey Jack cheeses on top.

                Mix the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and black pepper until well combined.

                  Combine & Pour: Pour the egg mixture evenly over the layered ingredients in the casserole dish, ensuring all components are coated.
